New in 1.1
The cockpit views are more realistic, you now have the cockpit views from the pilot's perspective, and not from below or above, also the FMC has been given a realistic perspective.

When I replace the file, then start the game, I end up in the cargo hold of the 738 and not in the cockpit, all views are through each other. What am I doing wrong

You aren't doing anything wrong, I perfectly followed the installation path and when I start the sim and spawn with the PMDG 737-800 the camera view goes to the bottom middle part of the aircraft.

For the Microsoft Store installation, the path is as follows:
C:\Users\[UserName]\AppData\Local\Packages\Microsoft.FlightSimulator_8wekyb3d8bbwe\LocalCache\SimObjects\Airplanes
For Steam installation the path is:
C:\Users\xxxxx\AppData\Roaming\Microsoft Flight Simulator\SimObjects\Airplanes
