I just worked it out after downloading half the available York area as 17 - 19.
You create the google layer like you've already done but then when you build and check it out in Dev mode you get the new google and msfs default stuff also. So next you make a polygon shape around the google layer and tick the box 'Exclude all' in the properties. This will get rid of all the autogen buildings. Now is the important part to click on the blue 'Save Scenery' button at the bottom of the scenery editor window and as you've just added a polygon you need to save it's shape file. This is where it's easy to mess it up as you need to save this shape file in the 'Scene' folder and not the main directory. You can find the 'Scene' folder by going to PackageSources\scene and then save it as 'yorknobuildings.shp' or something with a different name to your main sceneryproject.xml file in the main directory. My packagesources/scene folder has the following files in it.
objects.xml
yorknobuildings.dbf,
yorknobuildings.shp
yorknobuildings.shx
yorknobuildings.xml
That exclude all polygon won't get rid of the msfs trees, just the buildings so you need to select the already made polygon in the Scenery Editor window and then click on the blue 'Duplicate' button to make a copy. Select this new copy and in the properties window untick the Exclude All and this time tick the 'Vegetation' box and drag the Vegetation Scale slider all the way to the left. Wait several seconds and all the msfs tree will disappear and then you click on the blue 'Save Scenery' button and no need to choose the 'Scene' directory again.
Leaves just the crappy google trees but at least you don't have the msfs ones sticking out the top of buildings etc.
I also found out how to get rid of the shimmering water as Hogg's Pond in Dringhouses was really playing up. From the top down view, make a polygon the same shape as the water area and tick the 'Terraforming' box in the properties windows. Going to side view move the polygon up slightly and you'll display more of the the actual image of the pond so it looks more natural and that will also remove the flickering. You can also duplicate that same polygon and make that one 'Water' in the properties and choose 'Lake'.
Issues are that I still think the google pink roof tops look awful and many fields are silly bright compared to Bing so will have a go at changing the colour of the tiles next week when I get a chance. The file size of the folder that goes into the Community folder is a hefty 3.17gb so all of York will probably be around 5.5gb. Pretty big I guess and may slow down the framerates.
